Better For You Birthday Cake

Turns out you CAN have your cake and eat it too!


This is the perfect cake recipe to share at any gathering, celebration, or party. I whip this up for every birthday in my household and my family has loved it SO much I had to share it!

This cake is fluffy and moist, and extrememly simple to make. And the icing on the cake?

Better Birthday Cake

Prep: 5 minutes Cook: 30 minutes

(plus cool time prior to frosting)


Ingredients:

1/4 c coconut oil (or extra virgin olive oil)

3/4 c coconut flour

1 tsp baking soda

1/2 tsp sea salt

6 eggs

1/2 c full fat coconut milk (from a can)

1/3 c honey or real maple syrup

1tbs vanilla extract

1/4 tsp almond extract


Directions:

Preheat oven to 350 degrees. Prepare 9" round cake pan with parchment paper, lightly sprayed with coconut or avocado spray oil.

In a microwave safe bowl, melt coconut oil (about 30 seconds, increase time if needed)

and set aside.

In a food processor (or stand mixer) add all remaining wet ingredients, pulse to combine. Add dry ingredients and coconut oil, process on high until well combined, scraping sides occasionally.

Pour cake batter into the prepared cake pan. Bake for 28-34 minutes, cake should look golden. *insert a toothpick at the center to be sure cake is baked through

Allow cake to cool completely before frosting. Find the frosting recipe below!


Keto Chocolate Frosting

Prep: 5 minutes


Ingredients:

1/2 c cocoa powder

1/4 c ghee or coconut oil, solid

1/4 c coconut cream (solid from the top of the can)

1/2 c monk fruit or stevia powdered sugar (I love Swerve or Lakanto)

1 tsp pure vanilla extract


Directions:

Add all ingredients to a large bowl. Use a hand mixer to combine well, scraping sides occasionally. Frosting should be smooth and creamy! Place in refrigerator until cake is cooled (30 min - 1 hr). Allow frosting to return to room temp prior to frosting to easily spread over cake.
